The first of December has quickly rolled around and the Singapore heat has us craving a fresh and festive dessert. Our variation of the classic Pavlova induces nostalgia when placed on the Christmas Table. The Pavlova is a delicious baked meringue dessert with a crispy exterior and soft and light marshmallow centre.

Pavlova makes the perfect Christmas dessert as it can be prepared before hand and the fruit and cream can be added before serving. You can prepare the Pavlova recipe as one large dessert or individual portions for your guests. If you are feeling festive you can also prepare your Pav in the shape of a wreath.
4 Egg White
Pinch of Cream of Tartar
8 Tablespoons of Fine Sugar
1 Teaspoon of Vanilla Extract
1 Teaspoon of Vinegar
1 Teaspoon of Cold Water
1 Dessert Spoon of Corn Flour
Heat oven to 180 degrees Celsius. Whip four egg whites with cream of tartar until stiff, add 8 Tablespoons of sugar gradually and keep beating. Add one Teaspoon of Vinegar, add one Teaspoon of Vanilla Extract, 1 Dessert Spoon of Corn Flour and one Tablespoon of Cold Water. Put on a greased moist paper liner and bake 2 hours hours. Top with berries, fruit and cream as desired.
